THE BREWERS' HANDS
Makgeolli is Korean rice wine, brewed with a starter called nuruk and then left alone because the process cannot be hurried. Brewers keep their hands in the mash all day. Somebody noticed, long before anyone measured why, that those hands stayed soft.
